Yields 10 servings

For the Clementine Cordial (makes 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g caster sugar

For the Drink (produces 850ml, to serve 10)

400ml premium vodka
100ml classic gin
150ml peach liqueur
200ml citrus syrup (from the recipe above)
Whole cranberries, as a garnish
Mandarin essential oil, as a final touch

Method

To prepare the Syrup: Put all the ingredients in a saucepan, heat until it reaches a light boil, mixing until the sugar dissolves. After that, turn off the burner allowing it to cool down completely. Decant into an sealable bottle, close it and store in the fridge, where it will keep for about four weeks.

For the Batch Mix: Combine all the liquid ingredients in a large bottle, leave to sit for one hour, then strain preferably using cheesecloth, so it's fully clarified.

For serving: Add 85ml of your premix into your stirring glass containing ice, and agitate lightly for one minute until cold. Pour to a cold coupe glass or similar, top with some cranberries and complete it by giving it a brief mist of the essential oil over the top.
